The max. amount of money you can take out of China is 20000 RMB. Either you just go through immigration and pray that you are not checked (most likely you won't but that's no guarantee) or you can ask friends that you trust to help you bring it out when they leave China.

If you have a legal reason to move and convert the money, then just go to your bank and bring the docs. Otherwise, you can go to the illegal money changers to do it.
