What happens to chicken bones when soaked in vinegar?

From the website below, the mineral part of bone is hydroxyapatite, or [3Ca3(PO4)2]ยท(OH)2. Vinegar is diluted, say 5%, acetic acid. The acid attacks the calcium (and its phospate bonds), initially turning the bone to rubber and eventually into a saggy mass.

Leave it vinegar for 2 days and it becomes elastic-like...its an interesting experiment to try!

It would become bendable. I tried that once, I was able to tie the bone in a knot ^_^
