What is the best way to clean and maintain French fry oil?

You could try pouring it through a couple of coffee filters. In commercial kitchens, they use a similar process. This will remove leftover bits of food, but will not bring the oil back to its initial color.

Pour it threw a strainer that has small holes and only the oil will come threw.

if your oil has a flavor in it from some food you cooked and you would like to get rid of that flavor fry a slice of white bread in it
