Some schools offer "intensive" beginner courses, one year's worth cramed in 6 weeks over the summer, this would be 4 hours a day.. Or you can do a summer course in Germany thru a local University or college. Immersion is always good. You do language as well as culture and literature, then you have sight-seeing trips...meet someone who speaks no english...and voila...

get an introductory textbook that comes with an audio CD...then you can learn your grammar along with proper pronounciation

Low German is easier because it's close to english language---. but you'll no doubt need High German if you are dealing with a vast number of Germans.
