Why is it that some rabbits only give birth to one offspring at a time?

or the parents ate them. that is a possibility too

Larger rabbits will typically have more babies. Also, as a rabbit gets older towards the end of producing baby rabbits she will produce fewer babies. Cottontails will normally produce 6-8 babies from what I've seen. The rest had either probably left the nest or were eaten by predators such as cats.

Stop looking in rabbit holes. The babies need to be left alone.

Generally smaller breeds have smaller numbers of kits. Like a netherland dwarf may only have a few babies where as some larger breeds will have 10+ babies.. . If your only finding one baby wild rabbit the others were probably eaten by predators( or wandered off) because generally cottontails do not have just one baby( but it is possible)
