Why do some establishments use soda in a vodka sour recipe instead of lemon or lime juice?

Bad bartender. I was at one a few weeks ago and he did not know what B&B was.

it is not always soda as you think it is. it might just be the club soda, the carbonation in coca cola and what not. Ever gone some place to get a drink from the fountain dispencer and get mostly or only the "carbonated water" and little to no syrup. That stuff is terribly sour. I can see why they'd use it

That is weird...ive never seen anyone make a vodka sour with just vodka and sprite. I use to bartend and none of the girls i worked with ever made one like that.
