Why do our fingers bend when we release our hands?

Because we have muscles on both sides of our fingers - or rather, tendons. Our legs and our arms are the same way. In order to extend our fingers or to clench our fingers, we have to use opposite muscles in order to do so. When we relax BOTH sets of muscles, we end up in the middle, and hence, our fingers take on a curved look.

This is the normal anatomical position of the extremities when there is occurrence ot muscular activity present.
