Now THAT is a good question. When you sleep, it is just the same as boogers actually. The eye secretes tears while you sleep, and it seeps through the crakcs of your eyelids, and as you sleep, dust and other particle collect in the ducts where the liquid collects.

Boogers actually originate from the nose, and not the eye. Every time your eyes look up a little booger climbs out of your nose and migrates itself to the eye area. This has to do with human evolution and the metric system.

I think that this is your answer.. . There is a thin layer of mucus on your eye. When you sleep more is made and the excess mucus drains to the corner of your eye. It than dries making whatever you want to call those boogers.
