Because you care about those memories and cherish them. Its like when I smell my grandmothers perfume at Foly's Dept Store. Miss her all over again.

it's probably tied to when we were hunter gatherers, we could remember good food from bad food, i.e. rotting or tainted, poison.. by smell. thats my guess
