Why does a hiker lean forward when carrying a heavy backpack?

To balance the weight. By leaning forward, the body's weight is shifted forward. This counteracts the weight of the backpack.

The Backpack moves your center of gravity further behind you. To balance the forces ( and not fall) you have to lean forward.

You lean forward even when you do not carry a load. You do so to maintain equilibrium of your body by repositioning (shifting) CG of your body with respect to CG of earth in order not to loose stability.
