I don't know but the address 127.0.0.1 is a loopback address. Typically it's used to test to see if a network card is working but some people use host files to redirect themselves away from bad sites (like spyware sites - it works by keeping up a list of bad sites and matching them to the loopback address instead of their IP address).. . I guess it's possible that you have a program or a batch file or a firewall or anti virus file around that keeps changing your smtp server.

Your antivirus program may be changing that setting. Some antivirus programs use the localhost (IP address 127.0.0.1) to send mail, as a way to first inspect outgoing mail and to prevent worms from replicating themselves.
