The Coffee Bean and Tea Leaf is a decent chain. There are also a lot of fun little coffee shops in the casinos, especially the Paris, which has great atmosphere. Lots of locals meet up at the coffee bar at the Green Valley Ranch. I haven't had a chance to try out many of the independents, but I have included a link to get you started.
