How can a mature student improve their chances of being accepted into university?

Also try taking classes at a college that you could transfer to the university. I don't know if there are community colleges in Ontario, but in the states taking classes at a community college and doing well in them is taken into consideration when you apply to a university.

I really think high scores on the tests (SAT, ACT type stuff) would be a big help. In the US universities look at these a lot.

It sounds like you are already on the right path. As long as you have your GED/High School diploma, you should be fine. A university doesn't care if you've had a job or not. Volunteering always looks good too. I'd recommend contacting the colleges you are interested in and talking to their admissions department. They can say what you need the best.
